This is one my favorite recipes. Albondigas is a traditional Mexican meatball soup, it's hearty and delicious and perfect to prepare in the crock pot.
In a 4 to 5 quart slow cooker stir together the broth, diced tomatoes, zucchini, water, onion, carrots, garlic and frozen meatballs.
For seasoning add 1 garlic flavored minicube, 1 onion flavored minicube and 1 minicube of cilantro.
Cover and cook on low heat setting for 8 to 10 hours or on high heat setting for 4 to 5 hours. Stir and cover.
About 1 hour before ingredients are ready in the slow cooker, cook 1 cup of brown rice on the stove top. Once rice is cooked, add into the slow cooker, let cook for the remaining time, serve and garnish with fresh cilantro.
